Ingredients
Patties
- 1 1/3 cup chickpeas, rinsed, drained and mashed
- 1 tsp grated ginger
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp + 1 tsp soy sauce
- 3/4 cup oat flour
- ¼ cup peanuts, chopped
- 1/3 cup Mamba’s Crunchy Spicy Peanut Butter
- 1/4 cup green onions, chopped
- 1 tsp grated garlic
- 3/4 cup sweet potato puree
- Pepper, to taste
Sweet and Salty Spicy Peanut Butter Sauce
- 2 tbsp Mamba’s Original Spicy Peanut Butter
- 1 tsp maple syrup
- 1 1/4 tsp rice vinegar
- 1/2 tsp sesame oil
- 1/4 tsp garlic powder
- 2 tbsp water
- Pepper, to taste
Steps
- Preheat oven to 200ºC and line a baking sheet with parchment paper.
- To a large bowl, add all ingredients of the patties. Using a spatula fold until well incorporated. Taste and adjust seasonings by adding more soy sauce for saltiness, rice vinegar for acidity or garlic for a little kick.
- If the mixture is too wet, add some oat flour, one tablespoon at a time, mixing well between each addition.
- Shape the mixture into 4-6 patties, packing each tightly between your hands so it does not crumble. Place each patty on the prepared baking sheet.
- Bake for 15 minutes. Flip the patties and bake for an additional 15 minutes.
- In the meantime, prepare the sauce. In a small bowl, add all ingredients of the sauce and using a fork, whisk until fully combined and homogeneous. Taste and adjust seasonings by adding more peanut butter for a stronger peanut flavor, more maple syrup for sweetness, and rice vinegar for acidity. If the sauce is too thick to your liking, add a bit of water, ½ teaspoon at a time, mixing well between each addition.
- Serve the patties in a burger bun along with the sweet and salty peanut butter sauce and your favorite toppings (such as arugula, tomato, cucumber, parsley and green onions…).
